Tortilla Burgers

- 2 pounds hamburger
- 2 cloves garlic
- 1 tsp paprika
- 2 tsp dried basil
- salt and pepper
- 1 Vidalia onion
- 1 red pepper
- 1 pablano pepper
- vegetable oil
- 2 tbsp butter
- 2 cups sliced mushrooms
- shot of tequilla
- 8 soft tortillas
- 1 lime
- monterry jack cheese, shredded
- melted butter

Mince the garlic and add to the hanburger, along with the basil and paprika. Weigh out into half-pound portions and roll and flatten into burgers. Make them flat, but smaller than the tortillas. Salt and pepper each side.
Fire up the grill, and when the coals are ready, plop a cast-iron skillet directly on the coals. Slice the onion and peppers, toss with a little oil, and dump into the skillet. Let this reduce and carmelize a lot. Mabye about an hour. When golden-brown and delicious, remove from the heat and set aside.
Throw the butter into the skillet and add the mushrooms and let reduce until soft. Before removing them, hit 'em with the tequilla.
Grill the burgers to desired doneness.
Assemble the burgers: Tortila, burger, squeze of lime juice, onion/pepper mixture, mushrooms, healthy amount of cheese, tortilla.
Brush the top of the upper tortilla with the melted butter and put back on the skilet, butter side down. Brush butter on the other side. Wait a few moments, and flip to brown the second tortilla. Remove and enjoy!
Serve with spanish rice and black beans.
