NoLemon's Chili

1/2 lb bacon, diced
2 lbs round roast, trimmed & diced
6 jalapenos, chopped
3 yellow onions, chopped
6 cloves garlic, minced
1 lg. can whole tomatoes
2 dashes worcestershire
1/2 tsp. large grind black pepper
3 Tbl. ground cayenne pepper
tabasco to taste
1 Tbl. whole cumin seed

Directions:

Toast cumin seed in 450 degree oven for approx. 10 min. Set aside.

Using a dutch over, saute chopped bacon until translucent. Add onions, saute until clear. Add meat, garlic, and jalapenos. Saute until meat is browned. Add seasonings, including toasted cumin. Drain can of tomatoes into the mix. Using hands, tear apart (squish) each of the whole tomatoes into the mix.

Simmer on low heat, stirring frequently, until ready to serve (at least 1 hour). Add water if needed. Adjust seasonings to taste.
